Lactococcuslactisdoes not produce spores (nonsporulating) and are nonmotile. They have a homofermentative metabolism and have been reported to produce exclusive L-(+)-lactic acid. A specially selected strain of Lactococcuslactis is available as a culture concentrate or as part of a multiple strain custom blend with a variety of excipients. Lactococcuslactis is a gram-positive spherical cell, occurring in pairs and short chains. It is available as white, to cream-colored, free-flowing powder.
